A summer party isn’t complete without a delicious cocktail. Our selection of cocktails – all using fresh BerryWorld berries – are refreshing and taste great.
Blackberry mint mojito
A fantastic flavour combination – the mint and the blackberries go perfectly together giving a fruity twist on this classic!
You’ll need:
Blackberry Juice
- 1 pint blackberries
- ½ cup water
Blackberry Mint Mojito
- 6 whole mint leaves
- Juice from half a lime
- 2 oz rum
- 2 oz blackberry juice
- Soda water
What to do:
In a blender, combine the blackberries and water. Blend until pureed. Strain the juice through a fine mesh sieve and discard all the seeds.
In a glass, add the mint leaves, juice from half a lime and the lime rind, and a splash of the soda water. Gently muddle to release the flavour from the mint leaves. Fill the glass with ice and add the rum, blackberry juice, and top with soda water. Stir to combine. Garnish with lime wedge, mint sprig and blackberries.
Raspberry spritz
This bright and flavoursome cocktail not only looks great but tastes fantastic.
You’ll need:
For the Raspberry-Mint Syrup:
- 1 cup raspberries
- 1 cup sugar
- 1 cup water
- 10 mint leaves
For the Cocktail:
- 3 ounces prosecco
- 1 ounce club soda
- 2 ounces Cocchi Americano
- ¾ ounce Raspberry-Mint Syrup
- Raspberries and mint, for garnish
What to do:
For the raspberry mint syrup: In a medium saucepan, combine raspberries, sugar, and water over medium-high heat. Mash raspberries with a wooden spoon to break up. Bring to a boil and then remove from heat. Add mint leaves and stir to combine. Cover and let stand for 30 minutes. Using a fine-mesh strainer, strain into an airtight container. Syrup keeps up to 1 month in the refrigerator.
For the Cocktail: Fill a rocks glass or goblet with ice. Add sparkling wine, club soda, Cocchi Americano, and Raspberry-Mint Syrup. Gently stir to combine. Garnish with raspberries and a sprig of mint.
Strawberry daiquiri
This refreshing and easy cocktail is bound to be a show stopper. Perfect for parties, summer BBQ’s or any occasion this fruity number will definitely impress.
You’ll need:
- 4 fresh strawberries, plus ½ strawberry
to garnish - 2 tsp white sugar
- 35ml/1½fl oz white rum
- 1 tbsp strawberry liqueur
- 25ml/1fl oz lime juice
What to do:
Place the strawberries, sugar, rum, strawberry liqueur and lime juice into the base of a cocktail shaker and mash (muddle) with the end of a clean rolling pin.
Place the lid onto the cocktail shaker and shake well.
Strain the mixture into a Martini glass and garnish with half a strawberry.
Gin and blueberry cocktail
Blueberries and gin are the best summer combination. The lemon juice, black pepper and blueberries make a lovely syrup that go perfectly with the rest of the cocktail.
You’ll need:
- 175g blueberries
- 2 tbsp caster sugar
- Juice of 1 small lemon
- 2 grinds of black pepper
- 240ml Genever
- 60ml Limoncello
- Dashes of Angostura bitters
- ice, for shaking
What to do:
Put the blueberries in a saucepan with the sugar, half the lemon juice and the black pepper. Cook gently until the berries burst and break down.
Push the fruit and juices through a sieve into a bowl. You will end up with a purée. Chill.
For each drink, mix 60ml genever with 15ml limoncello, two to three tablespoons of the blueberry syrup, a dash of Angostura bitters and a little lemon juice. Shake over ice and serve.
