National Vegetarian Week (Monday 16 – Sunday 22 May) is an annual awareness week aiming to show people how tasty and nutritious a vegetarian diet can be. To celebrate this week of delicious meat-free eating we have put together a selection of recipe ideas perfect for a veggie feast.
Watercress with balsamic roasted shallots – A simple but hearty watercress salad, topped with sweet shallots roasted in balsalmic vinegar, crunchy hazelnuts and creamy vegetarian Brie.
Wild rice and chickpea salad with halloumi – This light and fresh dish is perfect for lunch or a smaller dinner. With all that delicious halloumi even the carnivores amongst you won’t be missing meat.
Moroccan beetroot & herb salad with natural yogurt dressing – Be more adventurous with your salad! This delicious main features wedges of cooked beetroot, along with baby spinach leaves, fresh mint and coriander. Delicious.
British Asparagus Pizza – This springtime pizza recipe includes lovely seasonal asparagus. It can be eaten hot or cold so is perfect for a brunch at home or a vegetarian lunchtime picnic.
Curried beetroot & lentil shepherd’s pie – Packed full of tasty vegetables, this super healthy alternative to a traditional shepherd’s pie substitutes minced lamb for beetroot and lentils. It’s dairy free, too, making it perfect for both vegetarians and vegans alike.
Spring onion & asparagus risotto – This easy risotto recipe couldn’t be simpler – and it’s jam-packed with delicate and fragrant flavours thanks to the spring onions and crunchy celery.
Watercress & mushroom sliders – A delightful meat-free dish that will leave everyone satisfied, with big flavours from the watercress and the vegetarian cheese.
Persian jewelled rice with raspberries, walnuts and parsley – Based on the classic Persian dish Javaher Polow, this fruity rice is truly fit for a king. It makes a great main, or even a side dish, and the buttery golden crust that develops on the bottom of the pan is absolutely gorgeous!
