September's recipe of the month

Spicy Chicken
serves 4-6

Ingredients
1 ring of black pudding - remove skin
450g (1 lb) cooked chicken
100ml (4oz) chicken stock
100ml (4oz) white wine
1 tin Campbells condensed mushroom soup
150ml (5oz) single cream

Instructions
Set oven at gas 6/200°c/180°fan/Aga roasting oven.
Slice the black pudding and arrange over the base of a shallow ovenproof dish. Break the chicken into pieces and put over the black pudding. Boil the stock and wine until reduced by half, stir in the soup and cream and bring to a simmer. Pour over the chicken, cover with foil, place on a baking sheet and reheat until hot and bubbly in the pre-set oven. Serve with rice or pasta and a chosen vegetable.

Lazy Cook tips: this is equally good made with turkey pieces. It can be prepared in advance and reheated to serve. Store, covered, in a refrigerator or larder.
